Local food has powerful stories. The business challenge is turning those stories into products, service and repeatable operations.

Gastro key insight

Local identity becomes a business asset when it appears in the product, a consistent story and reasons for customers to return after an event.

Market signals & context

Surabaya City Government reported that Rujak-Phoria 2026 took place at SUBEC on 9 May 2026, involving residents and culinary businesses. The event illustrates opportunities to activate food culture; an event report does not establish everyday market size or a restaurant's profitability.

Apply the principle, not just the decoration

A brand rooted in local identity needs to understand ingredients, eating habits, presentation and stories it can substantiate. Avoid treating regional culture as a visual addition. Agree with product and service teams which elements of the experience must remain when adapting the product to a new format.

Define what must stay consistent

Separate core elements such as flavour, texture and serving methods from adaptable elements such as portion size or packaging. Prepare standard recipes, ingredient specifications and plating examples. Test quality at peak times and after delivery. Repeatable quality makes a brand promise credible.

Give activations an operating objective

For a festival, pop-up or outlet launch in Surabaya, define the goal before choosing activities: product awareness, price testing, feedback or repeat purchases. Track samples, purchases, best-selling items, service times and customer comments. Compare activity costs with relevant outcomes, rather than attendance alone.

Prepare what happens after the event

Product availability, buying locations, opening hours and team responses need to be ready when interest grows. Use event findings to improve menus, packaging, training and digital communication. F&B branding advice works better when connected to product development and operational readiness.

Sources & editorial notes

Practical example

An activation can introduce a local dish through tasting and ingredient stories. Afterwards, test whether customers still choose it at regular prices, whether it can be produced consistently and whether it provides adequate contribution. Separate event reach, event transactions and repeat visits so evaluation goes beyond crowds.

Actions to test

1. Define one brand idea that staff can explain.

2. Test core products outside promotional periods.

3. Connect content, transactions and repeat visits.
