Indonesia's F&B market in 2026: growth does not mean every outlet wins

Sector growth creates opportunities, but restaurant decisions still depend on customers, location and outlet economics.

An F&B space from the Gastro archive, illustrating the relationship between concept, capacity and operations.

Gastro key insight

National growth indicates market direction. An individual outlet's viability still depends on local demand, contribution per transaction and team capacity.

Market signals & context

BPS reported year-on-year Indonesian economic growth of 5.29% in the second quarter of 2026. Accommodation and food service activities grew by 11.83%. The latter combines accommodation and food services; it is not a measure of restaurant revenue growth alone.

Combined sector figures, not individual restaurant revenue.

Read the market at three levels

Start with economic direction, examine the city's characteristics, then validate the trade area customers can realistically reach. National sector growth does not prove sufficient demand at a particular site. For a restaurant in Jakarta, Surabaya, Bandung, Medan, Makassar or another city, define a specific customer hypothesis: who visits, when they buy and why they choose you.

Test capacity before setting targets

Separate dine-in, takeaway and delivery transactions. Match peak-hour orders to kitchen capacity, staffing, payment points and pickup space. Sales targets that exceed production capacity create queues, inconsistent quality and extra costs that initial projections often miss.

Three decisions for owners

Choose a customer need to serve. Test core products and price ranges through real transactions. Then build conservative, base and optimistic scenarios using explainable assumptions. Monitor contribution per transaction, labour costs, waste and repeat visits; revenue without cost discipline does not establish a healthy business.

From research to execution

In a one-stop F&B business solution, feasibility work connects with menu R&D, branding, interior design, kitchen planning, SOPs, training and opening preparation. Every design decision should support the chosen business model. Gastro supports F&B consulting across Indonesia and international projects within agreed scopes.

Sources & editorial notes

Practical example

Two concepts on the same street may need different strategies. A lunch outlet tests service speed and repeat visits from workers; a destination restaurant tests the experience and reasons to travel. Compare demand periods, kitchen needs and fixed costs, rather than relying only on national market size.

Actions to test

1. Separate national, city and outlet trade-area data.

2. Record capacity during the busiest periods.

3. Test sales assumptions through transactions or a pilot.
