Gastro key insight
A walkable district still needs plans for deliveries, order pickup, storage and staff access.
Market signals & context
Bandung City's JDIH records Mayoral Decision 620/Kep.692-Dishub/2026 on Braga road closures, dated 1 April 2026. This article does not interpret its detailed schedules or operating conditions. Confirm current schedules and arrangements through official channels before implementation.

Assess access from several perspectives
Travel to the unit as a customer, staff member, supplier and delivery driver. Check walking distances, stopping areas, stairs, entrances and goods-handling routes. Comfortable visitor access may not be efficient for ingredient deliveries or waste removal. Document conflicts between flows.
Separate crowds from sales opportunities
Observe different days and times. Record visitor segments, dwell time, purchasing patterns and competing options. Use evidence from the unit's frontage, rather than a general impression of a busy main street. For a Bandung café or restaurant, test why customers would choose you and whether pricing covers service and space costs.
Design menus around capacity
A focused menu can simplify purchasing, storage and production. However, simplification should follow sales and product-contribution analysis. Design pickup points that do not obstruct dine-in guests. Review storage capacity if delivery windows are restricted.
Prepare the necessary documents
Collect measured plans, management's access information, utility requirements, supply schedules and construction cost estimates. List unverified assumptions before completing the feasibility study. A sound location decision combines customer potential with the ability to operate every day.

Practical example
If supplier vehicles can stop only at certain times, preparation schedules, storage size and purchasing frequency must adapt. Draw customer and supply routes on the same plan. Identify conflicts and test alternatives before agreeing the layout.
Gunsas service training: teams need to work with the layout during busy periods.
Actions to test
1. Confirm access rules with management and local authorities.
2. Test supply, waste and delivery-order routes.
3. Calculate storage needs from delivery schedules.
