From restaurant interiors to construction: design that works in operation

Gastro Admin | 13 October 2026 | Design & build
F&B spaces should appeal to guests while allowing teams to work safely and consistently. Interior, kitchen and construction decisions need coordination from the outset.

Gastro key insight
Restaurant design must be buildable, cleanable, maintainable and operationally practical. Aesthetic and technical decisions should meet in the initial brief.
Market signals & context
WHO summarises five food-handling principles: keep clean, separate raw and cooked food, cook thoroughly, keep food at safe temperatures, and use safe water and raw materials. These principles guide operations; technical drawings and local compliance still require appropriately qualified professionals.

Start with workflows, then aesthetics
Map receiving, storage, preparation, cooking, serving, washing and waste disposal. Check where clean and dirty flows intersect. In guest areas, review entrances, queues, ordering, seating, toilets and delivery collection. Use peak-hour scenarios to identify conflicts that an empty floor plan may conceal.
Translate the concept into technical requirements
Equipment needs working space, utilities, maintenance access and appropriate capacity. Coordinate kitchen planning with power, water, drainage, ventilation and building requirements. A visually finished design may not be ready for construction. Verify site dimensions and dependencies between work packages before procurement.
Control changes during construction
Document scope, specifications, responsibilities, schedules and change approvals. Assess how material or equipment changes affect cost, timing and operations. Record decisions so designers, contractors, owners and operators work from the same information.
Test before welcoming guests
Check functionality, test production flows, simulate service and train the team. Prepare a defects list with responsible owners. Interior design and construction within an integrated F&B solution should connect with menus, kitchen planning, SOPs and opening preparation. Practical example
Moving one cooking appliance can affect exhaust requirements, power, staff routes and preparation areas. Use a change register to record cost, schedule and operating impacts. Before handover, simulate the journey from ingredient receiving to dishwashing and waste removal with the team that will operate the space.

Actions to test
1. Verify site dimensions and utility requirements.
2. Review clean and dirty flows with technical professionals.
3. Close out defects and test operations before opening.
